This is like that old saying: "If it walks like a duck and it talks like a duck . . ." If there is an offer by one party, an acceptance by the other party, and consideration (mutual promises exchanged) for the agreement, then it's a contract no matter what you call it. I bet all those centers point to their "non-contractual agreements" when they want to enforce them against the employee!
